What it is
Tannins and brown melanoidins from roasting. The dark rim is the coffee-ring effect: as a drop dries, liquid flows out to the pinned edge and carries the particles with it.
How fast it sets
Overnight is too long.
Lift with
Oxygen bleach
sodium percarbonate
How we lift it
- Blot, then rinse with cool water through the back.
- If there was milk in it, an enzyme pre-soak takes the protein.
- Oxygen bleach for the brown that's left.
Never
Hot water on a milky coffee: it cooks the milk protein in.
