What it is
Anthocyanins again, the same family of pigments as wine. They are pH indicators: red in acid, blue-violet as soon as soap makes things alkaline.
How fast it sets
Overnight is too long.
Lift with
Oxygen bleach
sodium percarbonate
How we lift it
- Lift the fruit and seeds off with a spoon edge.
- Cool water through the back.
- Oxygen bleach soak; don't worry if it turns blue first, that's the pH.
Never
Soap before rinsing: it turns the stain blue and fixes it.
