03Why grey, why pink

The colour
of the pan

Sel gris rests on the clay floor of the pan before it is raked, so it takes its colour from the clay. Fleur de sel forms on the surface and never touches the floor, so it stays white.

Some days it has a faint pink tint. That is Dunaliella salina, a single-celled alga of salt pans that is full of beta-carotene; its pink comes with a smell of violets.

Sel de Guérande and fleur de sel de Guérande have had a protected geographical indication in the EU since 2012.
