What it is
A mixture: meat juices (protein), fat and starch, browned. The fat runs furthest, so every drip has a grey halo round a brown centre.
How fast it sets
Overnight is too long.

How we lift it
- Scrape, then cold water for the protein and starch.
- Enzyme (protease and amylase) for what's left of both.
- Surfactant and a hot wash for the fat halo.

Hot water before the protein is out.
