Toum is Arabic for garlic. Ours is garlic, lemon, oil and salt, whipped until it turns white. It goes on the chicken; the lamb gets tarator, made with tahini.
Saj bread is flour, water and salt stretched thin and baked on a metal dome. We fill it, roll it and press it on the plancha so it holds together all the way home.
Turnips and cucumber go into jars every Monday. A slice of beetroot in each jar is what turns the turnips that pink.
Twofires
Chicken thigh, and lamb with beef, stacked at seven and turning in front of the burners until the edges catch. About 60 cm of meat on each stack, shaved with the long knife.
A flat steel plate at full heat. Burgers are smashed thin on it so the edges crisp, and every wrap is pressed there after it's rolled.

Chicken wrap at half one on a Saturday. The pickles are pink, the garlic sauce is ridiculous, and they were still smiling.
Family box for five of us (it stretches if two are kids). The rider was here in 26 minutes and the fries were still crisp.
