  1. Floury hands working dough in a glass bowl

    4pm

    Mix

Flour, water, salt and the starter, fed that morning. We fold it four times over the next three hours.

  2. Shaped loaves resting on a floured bench by the oven

    7:30pm

    Shape

Divided by hand, 800g each, and shaped tight so the crust can open where we cut it.

  3. Rows of dough proving in floured cane baskets

    8pm

    Rest in the cold

Into floured baskets and the fridge at 4 °C overnight. This is where the sour flavour comes from.

  4. A baker carrying a tray of fresh round loaves

    5:40

    Bake

Straight from the fridge into a 250 °C deck oven with steam. Forty minutes, darker than you'd expect.

  5. Golden loaves lined up on a wire rack

    7:00

    On the shelf

Out of the oven, onto the rack by the window. They crackle as they cool.

Breakfast & brunch

Breakfast until 11:30, brunch at weekends.

Everything on toast is on our own sourdough. Weekends we serve breakfast until 1pm.
