Pick
By hand and at full colour, in the sandy fields of Dăbuleni by the Danube. Only whole, unbruised pods go in.
Five small-batch pepper sauces, fermented in clay crocks for ninety days, the way Oltenian grandmothers kept summer through the winter.
The idea
Most hot sauce is vinegar in a hurry. Ours sits in clay crocks for ninety days, until the peppers turn sour, deep and a little wild. It takes
patience.
You can taste every one of those days.
Lacto-fermentation is the oldest trick in an Oltenian pantry: vegetables, salt, water, a clay pot and time. We do the same with peppers, then grind them on stone, sieve them twice and seal every bottle in wax.
No vinegar to rush the sourness, no sugar to hide the heat, no gums to fake the body. What's on the label is what went in the crock. The rest is bacteria and patience.
How it's made

By hand and at full colour, in the sandy fields of Dăbuleni by the Danube. Only whole, unbruised pods go in.
02 · Day 00
Pods and garlic go into a glazed clay crock under 2.5% brine, held down with a river stone and tied under a woven ștergar.
03 · Day 01 of 90
Lactic bacteria do the work. Two weeks of bubbles, then a slow, sour calm. We taste every crock every Friday.
04 · Day 90
Stone-ground, sieved twice, bottled by hand and dipped in wax. Every label carries its crock and batch number.
Ninety days later…
The five
Mildest first. Scroll to toss each card and taste the next one, or open any card for the whole story.
90
Days in clay. Not nine, not thirty. The sourness needs the whole three months.
2.5%
Salt, by weight. Enough to keep the bad bacteria out and the good ones busy.
0g
Added sugar. The sweetness is the pepper's own, and the plums', and the honey in No.04.
Pour it on
